Haaaave You Made Hummus?

What do you get when you combine a snow day and too much How I Met Your Mother?

AWESOME hummus of course..

Basil Garlic Hummus

In a food processor combine the following:

1 can drained and rinsed chick peas (save 1/3 c. liquid from can)

3 cloves of garlic

2-3 tsp of lemon juice

1-2 tsp of olive oil

1-2 tbs tahini

salt and pepper

2-3 leaves of fresh basil

** Add liquid from can to desired consistency

Whirl together, scraping the sides occasionally.. And Voila!

TIP: I find all homemade hummus tastes better after a day in fridge (or this is what I tell myself in attempt to not eat all of it right of out of the food processor bowl!)

Sweet Potato Hummus

** Adapted and inspired from Vive le Vegan’s “Cannellini Bean Yam Hummus” (pg.60)

In a food processor combine the following:

1.5 c.  canned six bean medley (could use straight chick peas or cannellini beans)

3/4 c. cooked and mashed sweet potato

2-3 tbs fresh lime and lemon juice

2 cloves of garlic

2 tbs olive oil

1/4 c or so of banana peppers and some juice from jar

salt and pepper to taste

Mix together in processor, spice to your liking and enjoy!

I must say both deserve air high fives!
